Executive Chef Tony Heesterman attended and graduated with honours from the Vancouver Culinary Institute.  While working in increasingly important positions in a number of well known kitchens in British Columbia, he was awarded Gold Medals at the Culinary Art Show in Victoria, BC and in Seattle, WA, as well as a series of Silver and Bronze awards in Victoria and Vancouver, BC.  

The Pan Pacific hired Tony on as second cook after he completed his apprenticeship.  He left the Pan Pacific Hotel as a Chef de Partie to take on the position of Executive Chef at Finn’s Waterfront, a 200 seat fine dining restaurant in New Westminster, BC.  Tony was offered another opportunity to open a new Holiday Inn hotel restaurant in Metrotown, Burnaby, BC and in his two years there Tony helped achieve the 1991 Torchbearer Award for the top 20 hotels out of 1,600 Holiday Inns worldwide.

Chef Heesterman was an active member of the culinary team of Centerplate, Volume Services America’s Canadian division from 1991 to 2010 at BC Place Stadium.  He provided on-site consulting for convention centres in Denver, CO, San Jose, CA and the Houston Civic Center.  He regularly assisted Volume Services America operations in Canada and the USA during openings or special events.  As a result of his vast culinary knowledge and superior organizational talent, he has a proven track record to create and produce memorable dinners for very large events.  BC Place stadium has a seating capacity of 60,000 and has 35 suites and 6 larger party rooms.

In addition to providing high quality culinary services during the sports events and the many trade and consumer shows held at BC Place Stadium, Chef Heesterman was a key member of the catering team, which received outstanding compliments for hosting such events as;

  • The 2010 Olympic Opening and Closing Ceremonies as well as the Awards Ceremonies.
  • The Prime Minister of Canada’s Gala dinner for 18 Leaders of APEC Economies.
  • A Gala Dinner for 1,000 guests for l’Oreal
  • Circle of Care dinner attended by Prince Andrew for 975 guests
  • A reception for 9,000 guests – International Aids Conference
  • A Gala Dinner for 2,750 guests – Amway International
  • A Gala Dinner for 3,000 guests – Government Finance Officers

The closure of BC Stadium to replace the roof lead Chef Heesterman back to the hotel industry where he took position as Executive Chef at the Coast Hotels leading the culinary teams firstly in Chilliwack, BC and then at the Coast Inn of the North in Prince George, BC.
